Monday: Grilled Chicken, Quinoa Rice, & Veggies
We had just returned from Italy and I didn’t have the energy to make a grocery run so this dinner is a product of what we had on hand in our pantry and freezer. Grilled chicken, frozen steam in the bag mixed vegetables, and quinoa & rice blend. Nothing fancy, but it was good and better for us than ordering in pizza.
Tuesday: Black Bean & Quinoa Enchilada Bake
I tried this recipe based on my friend, Kelly’s, recommendation. It was a hit for all and super easy to make.
Wednesday: Salmon in a Spacesuit
My children love salmon so I thought they would enjoy making their own salmon pouches. I have found that when my children participate in creating dinner they are more likely to eat all of their dinner…give it a try if you have picky eaters.
Thursday: Pork Chops, Veggies, and Mac & Cheese
Easy dinner of grilled pork chops, roasted zucchini & yellow squash, and mac & cheese.
Friday: Chicken Pot Pie
My sweet friend, Laura, brought us a chicken pot pie after John was born. It was delicious and my children asked me to get the recipe so we could have it again (…and again). It is simple to make and all my kiddos ask for seconds.
