One of my favorite quick and healthy meals to make for my family is fish tacos. These are so easy to whip up on nights that you would rather order take out. And they are much better for you! Best of all, my children love them!
On to the recipe…I don’t measure anything when I make these so the following are approximations. The following recipe feeds my family of five.
1lb of flakey fish (tilapia, red fish, grouper…whatever you like; last night I used amberjack).
your favorite seasoning for the fish (I like blackening spices, but sometimes I just use salt & pepper)
1/2 a head of green cabbage, shredded (sometimes I’m lazy and buy the pre-shredded baggies)
3/4 cup of cherry tomatoes, halved
1/4 cup cilantro, chopped
3-4 scallions, chopped
1 lime, juiced
1/4 cup olive oil
salt and pepper to taste
5-10 tortillas (any kind you like; when I want to be healthy I buy the freshly made whole wheat ones from the grocery store, otherwise I usually buy the raw flour tortillas that you cook yourself)
1. Season fish and cook in a skillet on medium high until cooked through flipping half through (usually 5-10 minutes per side depending on the fish). I usually spray the pan with a little olive oil Pam, but you can use regular olive oil or whatever oil of your choosing.
2. In a medium sized bowl combine the cabbage, tomatoes, scallions, cilantro, olive oil, lime juice, salt and pepper.
3. While the fish is cooking heat or cook the tortillas according to package directions.
4. Top tortillas with cabbage mixture and fish (I usually just break apart the fish using tongs) and enjoy!
