Sorry, I’ve been MIA. It has been a crazy few weeks around here getting back into the swing of school life and extracurricular activities.
Last night, as I was making dinner (yummy chicken spaghetti casserole) I wondered how many of you know the quick and easy way to shred chicken. I used to shred chicken using a fork, but it always took forever and I usually ended up burning my fingers in the process. Now, I just dump the warm chicken into my KitchenAid Mixer and shred it using the paddle attachment. The chicken is done in a minute or so…super fast and no burnt fingers!
For convenience, I microwave the chicken. I usually use boneless, skinless chicken breasts. I season them, place them in a microwave safe dish, and cover with plastic wrap. Then I cook for 10-15 minutes depending on how many pieces of chicken I am cooking. Last night I cooked 6 breasts for 15 minutes. Just be careful not to overcook them or your chicken will be rubbery and tough.
**If you prefer to use a whole chicken or chicken still on the bone you will just need to remove the bones before shredding the chicken in the mixer.
