I am not a huge swordfish fan, but mixed in this pasta it was really good! This is a very yummy, light pasta dinner. Perfect for summer!
Tuesday: Paleo Bison Chili with Kale

Wednesday: Unstuffed Cabbage Casserole
The first time I made this recipe I had the thought, “this is not going to be any good,” about half way through making it. Fortunately, it tastes much better than it looks! I subbed ground turkey instead of beef to make it a little healthier. I will say that this recipe is a little more involved than what I usually make; therefore, it won’t be a regular in the rotation.
Thursday: Roasted Lemon Pepper Salmon
This was super yummy! And what is not to like about a one pan meal?
Friday: Easy Sheet Pan Greek Chicken
Another super yummy one pan meal.
Saturday: “JJ Watt” Steak, Cauliflower, and Salad
Here’s the back story on this beef tenderloin roast. I was shopping at Trader Joe’s one morning and I overheard the woman next to me talking. It appeared that she was a personal chef and was giving another woman a tour of the store. I heard her say, “oh, you want to see what I cook for JJ Watt?” Well, I sure did! She said that she cooks him this one pound TJ’s Seasoned Filet Mignon (sorry, meant to snap a picture of the package) on the grill…and he eats the entire thing in one sitting. So, of course, I had to buy it for myself because I have several little people in my house that would love to eat what JJ eats! 🙂
Sunday: Grilled Chicken, Broccoli, and Salad
Easy grilled chicken for dinner this night. I have been loving Flavor God’s Everything seasoning lately.
Lunch: Crockpot Thai Peanut Chicken
I make this on Monday mornings and eat it for lunch through out the week. It is so yummy! I serve it over brown rice and steamed broccoli.
