Monday: Grilled Chicken, Broccoli, and Butternut Squash
Simple and quick dinner of grilled chicken and roasted veggies. Madeleine and Malcolm both LOVE broccoli so we have it often!
Tuesday: Slow Cooker Lemon Garlic Chicken
Tuesdays are busy for us so I thought it was the perfect day to try a slow cooker meal. I saw this recipe on Pinterest and thought it looked good (and pretty!). It was super easy to make and the chicken was very tender, but I thought it was a little too lemony. I want to make it again, but dial back the amount of lemon juice and see how it is. For sides we had, avocado & tomato salad, quinoa & brown rice, and brussel sprouts.
Wednesday: Pork Loin, Broccoli, and Mac & Cheese
Tonight we had a roasted pork loin seasoned with salt and pepper. For sides we had broccoli (I told you we have it often!) and mac & cheese. We used to have mac & cheese a handful of times a year, but in a moment of weakness the kids convinced me to buy some at Costco…we have been working our way through the box.
Thursday: Chicken Pot Pie
This is one of the family’s favorites and I don’t mind because it is filled with lots of veggies.
Friday: Slow Cooker Sticky Chicken Wings
A friend of mine mentioned that she made these wings recently and they sounded so good we gave them a try. I have tried several recipes from Damn Delicious and they all have been great! You should check out Chungah’s recipes…I am sure you will find several you will love.
