Monday: Lemon Pepper Chicken
Tuesday: Grilled Steak and Vegetables
Grilled New York strip, steamed broccoli, roasted russet potatoes, and roasted baby sweet peppers.
Wednesday: Homemade Chicken Nuggets and Fries
The kids had a great time helping make this meal. Homemade chicken nuggets are easy to make and healthier than the frozen or fast food varieties. I will do another post with my chicken nugget recipe, but I am sure you can find dozens of recipes on Pinterest until then. We also made hand cut french fries to go with our nuggets. I forgot all about a vegetable…does ketchup count?
Thursday: Mexican Quinoa
This is a super easy, quick, one pot meal that was loved by all and sure to become a staple in our house.
Friday: Baked Potato Soup
I had purchased the 5 pound bag of russet potatoes from Costco and needed to find ways to use them up (note the roasted potatoes and french fries earlier in the week) so I decided to make a baked potato soup to finish off the remaining potatoes. I tried this recipe that I found on Pinterest.
